  • 2 cloves garlic, minced
  • 1/2 cup white wine (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Heat the broth in a saucepan and keep it warm over low heat.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the sliced mushrooms and cook until tender and browned, about 5 minutes.
  4. Stir in the Arborio rice and cook for 1-2 minutes until the rice is slightly translucent.
  5. If using, pour in the white wine and cook until it’s mostly absorbed.
  6. Begin adding the warm broth, one ladle at a time, stirring frequently. Allow each addition to be mostly absorbed before adding the next. Continue until the rice is creamy and al dente, about 18-20 minutes.
  7. Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
  8. Serve warm, garnished with fresh herbs.
